What Is Silymarin? The Compound Behind Milk Thistle Seed

Every milk thistle label in the world prints the word silymarin. Almost none of them explain it. So you end up comparing "80% silymarin" against "standardised extract" against a bag of raw seed with no number on it at all, and there's no way to judge which is better.

Let me fix that. Silymarin isn't one compound. It's a group of compounds.

What is silymarin?

Silymarin is a complex of flavonolignans extracted from milk thistle seed (Silybum marianum). It contains silybin A and B, isosilybin A and B, silychristin, isosilychristin and silydianin, plus the flavonoid taxifolin. Silymarin makes up roughly 1.5 to 3% of whole seed by weight.

The name gets used two ways and that's the source of most confusion. Chemists mean the specific flavonolignan mixture. Marketers often mean "the good stuff in milk thistle." When a label says 80% silymarin, it means the extract has been concentrated so that 80% of its mass is that flavonolignan mixture. Raw seed is around 2%.

So a 200 mg capsule of 80% extract carries about 160 mg of silymarin. To match that from seed you'd need roughly 8 grams. That's the whole reason extracts exist.

What is a flavonolignan?

A flavonolignan is a hybrid molecule, half flavonoid and half lignan, fused into one structure. In silybin, a taxifolin unit joins a phenylpropanoid unit (coniferyl alcohol) through an oxirane ring. Milk thistle is one of the few well-known plants that produces this class in quantity.

It's an unusual bit of plant chemistry. Flavonoids are everywhere in the plant kingdom. Lignans are common enough. Welding the two together into a single stable molecule is rare, and milk thistle does it in the seed coat, which is why the seed is the only part of the plant worth much.

The leaves are edible. The root is edible. Neither carries meaningful silymarin.

What is silybin, and why does it matter more than the rest?

Silybin, also written silibinin, is the most abundant flavonolignan in silymarin and the most biologically active. It's been treated in medicine as a hepatoprotective substance since the 1970s. When research reports an effect from milk thistle, silybin is usually the compound doing the work.

Silybin exists as two diastereoisomers, silybin A and silybin B. They're mirror-ish variants of the same molecule, and they don't behave identically in the body.

Here's the part I find genuinely clever. Across authentic milk thistle, the ratio of silybin B to silybin A holds steady at approximately 1.58. Researchers analysing more than 40 commercial milk thistle products by HPLC found this ratio consistent across extracts, and confirmed it in seed samples too. It's a fingerprint. If a product's ratio is off, something's wrong with it.

I like this because it's one of the only objective authenticity tests in a category where "premium" and "pure" mean nothing.

What else is in the silymarin complex?

Beyond silybin, the complex contains isosilybin A and B, silychristin, isosilychristin, silydianin and the flavonoid taxifolin. It also includes an undefined polymeric polyphenolic fraction making up around 30% of the total, which remains poorly characterised and possibly bioactive.

That 30% is the honest gap. A third of the complex is a fraction researchers describe as potentially bioactive but not fully identified. It might contribute. It might be inert. Nobody has pinned it down.

This is one argument for whole seed over isolated silybin. If you take purified silybin, you get the molecule we understand. If you eat ground seed, you get the whole committee, including the part nobody's characterised, plus the oil, the fibre and the taxifolin. Whether that matters is unproven. I lean towards whole food, but I'm not going to dress up a preference as a finding.

Why is silymarin so hard for your body to absorb?

Silymarin has water solubility below 50 micrograms per millilitre and poor intestinal permeability, and it's degraded in the gastrointestinal tract. Only about 20 to 50% of an oral dose is absorbed in standard capsule form. This is the single biggest limitation of the compound.

Three problems stack on top of each other. It barely dissolves. What dissolves crosses the gut wall poorly. What crosses gets hit hard by first-pass metabolism in the liver.

The pharmaceutical industry has spent decades attacking this. Phytosome complexes, micellar formulations, nanocrystals, krill oil carriers, spray-dried microparticles with surfactants. A micellar formulation trialled in 16 healthy volunteers against standard capsules at 130 mg silymarin was designed specifically to get around the solubility ceiling. A krill oil formulation raised silybin transport across an intestinal cell barrier by 28% versus plain silymarin powder.

None of that is available to you in a bag of seed. But one thing is: fat.

Does taking milk thistle with food improve absorption?

Yes. Dietary fat improves silymarin absorption roughly 2 to 3 fold by increasing bile flow and forming mixed micelles that solubilise the flavonolignans. This is why almost every modern silymarin trial specifies dosing with meals rather than on an empty stomach.

This is the most useful practical fact in this entire article, and it costs nothing.

Ground milk thistle seed in water does very little. The same seed in full-fat yogurt, or stirred into oatmeal with nut butter, or blended with avocado, does substantially more. You're doing at home, crudely, what the phytosome manufacturers do in a factory.

Breakfast is the easy slot. Eggs, avocado, olive oil, nut butter, whole milk. Any of them work.

Does the seed's own oil help?

Milk thistle seed contains 20 to 30% fixed oil. When you grind whole seed and eat the grounds, the silymarin and the oil arrive in your gut together, which is closer to the fat-plus-flavonolignan condition that improves absorption than a strained water infusion is.

I want to be careful here, because this is exactly the point where a supplement brand would overclaim.

What I can say: the fat is there, the fat helps absorption in general, and eating the whole ground seed keeps them together. What I can't say: that whole seed outperforms a phytosome capsule, or that anyone has run that trial. As far as I know, nobody has. It's a mechanistically reasonable argument, not a proven one, and you should treat it as such.

What it does explain is why straining is a mistake. Strain the seed out and you've removed the silymarin and the oil in the same motion. Milk thistle tea done properly means not straining.

How much silymarin is in whole milk thistle seed?

Whole milk thistle seed contains roughly 1.5 to 3% silymarin by weight. European pharmacopoeia sets a minimum of 1% silymarin complex per kilogram of dried material. The Silyb cultivar runs around 2%. Content varies with variety, soil, planting density, harvest stage and genotype.

That variability is real and I'm not going to hide it. Two bags of honest, well-grown milk thistle seed can differ by a factor of two in silymarin content, and neither supplier is lying.

Rough arithmetic on a 1 lb bag at 2%: 454 grams of seed carries about 9 grams of silymarin. At 1 to 2 teaspoons a day, call it 5 grams of seed, you're getting somewhere near 100 mg of silymarin. That's just below the 140 mg bottom of the clinical range, and that's before absorption losses.

Which tells you something worth knowing: seed is a food-level intake, not a clinical dose. If you want clinical numbers, buy a standardised extract, and I'll explain when that's the right call.

Is more silymarin always better?

No. Silymarin has been tolerated at doses above 1,500 mg daily in trials, but higher concentration doesn't guarantee better outcomes. Absorption, formulation and the presence of dietary fat affect how much reaches your bloodstream more than the label percentage does.

A 90% extract with terrible bioavailability can deliver less silybin to your plasma than a lower-concentration product formulated properly. The label number measures what's in the capsule, not what's in you.

There's a supply-side reason for scepticism too. Researchers examining commercial milk thistle supplements found chemical and microbiological quality poor enough that they suggested it might account for the unsatisfactory and non-reproducible clinical outcomes in the literature. That's a striking thing for scientists to conclude. It means some of the "milk thistle doesn't work" studies may have been testing products that weren't really milk thistle.

So no, I don't think chasing the biggest percentage on a label is smart. I think knowing your supplier is smarter.

What should you actually do with this?

Three things follow from the chemistry. Grind the seed, because silymarin sits in the coat and whole seed passes through you intact. Eat the grounds rather than straining them, because water won't dissolve silymarin. Take it with fat, which improves absorption 2 to 3 fold.

That's the one absorption lever you control, and it costs nothing.
